Apple Crisp

Ingredientsapple cris

4 cups apples, peeled, sliced
1 tbsp flour
3/4 cup brown sugar
1/2 cup flour
1 cup oatmeal
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup (1 stick) butter, melted

Directions

Peel and slice apples; arrange in greased 9″ x 9″ baking pan. Combine 1/4 cup sugar and 1 tbsp flour; sprinkle over apples.

Mix together brown sugar, flour, oatmeal, baking powder, spices, and melted butter. Sprinkle mixture over apples. Bake at 350 degrees for 30-40 minutes or until lightly browned.

Apple Butter

Ingredientsapple butter

4 cups apples, peeled and chopped
1/2 cup water or apple cider
3 cups sugar
1/4 cup apple cider vinegar
1 tsp cinnamon
1/2 tsp each allspice, cloves and ginger

Directions

Cook apples in water or cider until tender (about 15 min). Mix in sugar, vinegar and spices. Return to heat and continue simmering, uncovered, until mixture thickens. Store in refrigerator. Makes 2 pints.

Upside – Down Apple Pie

Ingredientsupside down apple pie

Glaze:
1/4 cup brown sugar
1 tbsp corn syrup
1 tbsp melted butter
1/4 cup pecan halves

Pastry for 9″ double crust pie

Filling:
2/3 cup sugar
2 tbsp flour
1/2 tsp cinnamon
4 cup sliced, peeled apples

Directions

Preheat oven to 425 degrees. In 9″ pie pan, combine brown sugar, corn syrup and butter; spread evenly over bottom of pan. Arrange pecans over mixture in pan. Place one pie crust over mixture in pan. In small bowl, combine sugar, 2 tbsp flour and cinnamon; mix well.

Arrange half of apple slices in pie crust – lined pan; sprinkle with 1/2 sugar mixture. Top with second crust; seal and flute. Cut slits in several places. Bake for 8 minutes. Reduce oven temp to 375 degrees and bake for an additional 25-30 minutes. Loosen edge of pie; carefully invert onto serving plate. Serve warm.

Apple Pork Chops

Ingredients

4 pork chops
2 tbsp butter
–salt
2 tbsp flour
2 tbsp brown sugar
1 1/2 cup apple cider
1 large cored apple, cut into 4 rings
-cinnamon

Directions

In 10″ skillet, brown pork chops in butter. Season to taste with salt. Remove chops. Stir flour and brown sugar into drippings to make a thick paste. Gradually add apple cider.

Cook over medium heat and stir until thickened. Place pork chops in baking dish. Put 1 apple ring on each chop. Sprinkle with cinnamon. Pour apple cider mixture into baking dish. Bake at 350 degrees for 40-50 minutes or until chops are tender.

Apple Muffins

Ingredientsapple muffins
Cooking spray
1/4 cup chopped pecans
3/4 cup plus 2 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon fine salt
1/4 cup canola oil
2 large eggs
1 cup natural applesauce
1 teaspoon vanilla extract
3/4 cup low fat buttermilk
1 apple, peeled, cored and cut into 1/4-inch pieces

Directions

  • Preheat the oven to 400 degrees F. Coat a 12-capacity standard muffin pan with cooking spray.
  • In a small bowl, mix together the pecans, 2 tablespoons of the brown sugar and the cinnamon.
  • In a medium bowl, whisk together the all-purpose and whole wheat flour, baking soda and salt.
  • In a large bowl, whisk the remaining 3/4 cup sugar and the oil until combined. Add the eggs, one at a time, whisking well after each addition. Whisk in the applesauce and vanilla.
  • Whisk in the flour mixture in two batches, alternating with the buttermilk. Whisk just until combined. Gently stir in the apple chunks.
  • Pour the batter into the prepared muffin pan and sprinkle with the pecan mixture. Tap the pan on the counter a few times to remove any air bubbles. Bake until a wooden pick inserted in center of one of the muffins comes out clean, 20 to 25 minutes.
  • Let cool on a wire rack for 15 minutes. Run a knife around the muffins to loosen them and unmold. Cool completely on the rack.

Ingredientsapple bread
• 1 cup vegetable oil (or butter is tastier)
• 2 cups sugar
• 1 teaspoon vanilla
• 3 eggs
• 1 teaspoon salt
• 3 cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoons cinnamon
• 3 cups grated apples – peeled, cored, ( food processor)
• 1 cup broken pecans ( if desired)

Directions
1. Mix oil, sugar and vanilla.
2. Add eggs, salt, flour, soda, cinnamon, grated apples, pecans.
3. Divide mixture between two greased 8-in. x 4-in. bread pans.
Bake at 310 degrees F for 75 minutes or until bread test done.
4. Cool before removing from pan.
